Avocado Oil Recipes For Your Christmas Dinner

Pork-Tenderloin1The Christmas meal is a huge tradition and a major part of celebrating the holiday.  Of course, there are your traditional favorites: ham, turkey, mash potatoes, green beans, etc.  Unlike Thanksgiving, Christmas is not so entrenched in tradition that you can step outside the box and try out new foods and meal preparations.  Try out some seafood, different baja infused salads, or maybe a southwestern recipe.  Below are a couple of different recipes to try out this Christmas.  They all use the Ahuacatlan avocado oil, which is a wonderful standalone gift to give this year also to the big cook in the family.

Winter Salad – Recipe taken from Yummly.com’s Christmas recipes section.  This Winter Salad combines many of the classic Christmas tastes like cranberries and toasted pine nuts.  Add in a dash of Ahuacatlan avocado oil, or mix it up with added flavor like an apple, fig, or raspberry flavored avocado oil dressing.

  • 14 cup fresh lemon juice
  • 12 tsp salt
  • 14 tsp black pepper (freshly ground)
  • 1 garlic clove (minced)
  • 2 tbsps Ahuacatlan avocado oil
  • 2 cups fennel (thinly sliced)
  • 12 cup celery (diagonally sliced)
  • 4 cups romaine lettuce (torn)
  • 2 cups grapefruit (sections)
  • 1 cup pomegranate seeds
  • 12 cup avocado (chopped peeled)
  • 2 tbsps pine nuts (toasted)

•    2 tsps cumin seeds
•    2 tsps coriander seeds
•    2 tsps black peppercorns
•    1 shallot (minced)
•    2 tbsps Ahuacatlan avocado oil
•    1 tsp salt
