Roasted Chicken

  • 3 medium garlic heads, cloves peeled
  • 1 cup lime Ahuacatlán Avocado Oil
  • 1 whole clean chicken (approx. 3.3 pounds)
  • 1/2 cup chopped parsley
  • 1 fresh rosemary sprig
  • 2 lemons, thinly sliced
  • 1 cup water
  • Salt
  • Fresh ground black pepper

Preheat oven to 400 ºF.

Brush 3-4 teaspoon lime Ahuacatlán Avocado Oil on both the outside and inside of the chicken. Then rub the whole surface of the chicken with a mixture of chopped parsley, salt, and pepper.

Stuff with half the garlic cloves, rosemary and thin slices of lemon. Tie the legs with kitchen string.

In the bottom of a large ovenproof dish, place the rest of the garlic cloves and then the chicken on top. Add water. Bake for about 1 hour 20 minutes or until it is juicy and fully cooked.


While in the oven, baste the chicken with its drippings, to make the meat tastier
