- 1 ½ cup shredded Cotija cheese
- ¼ cup milk
- 1 cup cornstarch
- 1/2 cup wheat flour
- 1/4 cup sugar + 1 teaspoon
- 2 eggs
- 1 liter Natural Ahuacatlán Avocado Oil
- 1 tablespoon baking powder
In a large bowl, mix together the cheese, cornstarch, flour and teaspoon of sugar until well-blended
To the mix add the eggs, milk, baking powder and 1 tablespoon of Natural Ahuacatlán Avocado Oil
Knead the dough until smooth and not sticky
Once ready, take the dough into your hands and form 3-inch balls. Let rest for 1 hour
Place a heavy pot over medium heat and warm up the rest of the Natural Ahuacatlán Avocado Oil. Do not use high heat as the fritters will be raw inside
Add the fritters, a few at a time, and cook. They will sink to the bottom, then rise and expand. If the don’t rise to the surface, the oil is not sufficently hot
Once golden brown, remove from oil and drain on paper towels
