Oat and Chia Seed Pancakes

Oat and Chia Seed Pancakes

  • ½ cup ground oats
  • ½ cup wholewheat flour
  • 1 tsp sugar
  • 1 tsp baking powder
  • 2 tsp Ahuacatlan Avocado Oil
  • 1 tsp vanilla extract
  • ¾ cup whole milk
  • 1 egg, separated
  • Ahuacatlan Avocado Oil to make the pancakes

In a large bowl add ground oats, wholewheat flour, sugar, and baking poder. Add Ahuacatlan Avocado Oil, vanilla extract, milk and just the egg white.

With a whisk, beat the mixture until well incorporated and enough air to make it fluffy.

In a non-stick pan add 1 tsp of Ahuacatlan Avocado Oil and heat up. When hot add 1-2 tablespoons of the pancake mixture, let cook on one side until bubbles start showing, flip to cook the other side. Repeat until you finish all your pancakes.

Serve with fresh fruit.
