- ¼ Watermelon, cut in cubes
- 2 Cups Arugula
- 6-8 Basil Leaves
- 3 Limes
- 2 Tbs. Ahuacatlan Avocado Oil
- 6 Oz. Goat Cheese
In a medium sized bowl, mix ¼ watermelon previously cut in cubes, 2 cups of arugula and about 6-8 basil leaves.
For the vinaigrette, mix the juice of 3 limes, 2 tbs. of Ahuacatlan Avocado Oil, salt and pepper to taste. Add the vinaigrette to the bowl and toss. Add last 6oz. of crumbled goat cheese. Our chef suggests that you substitute goat cheese for feta cheese to give a different flavor to this dish.
