Cilantro Rubbed Salmon

  • 1 lb. Salmon filet, cleaned deboned
  • 1 bunch of cilantro
  • 1 clove garlic
  • the juice of 3 limes
  • 4 tbs Ahuacatlan avocado oil
  • Salt and pepper to taste
  • 2 tbs mayonnaise

In a blender, add cilantro, garlic, lime juice, Ahuacatlan avocado oil, salt and pepper. Blend well.

Cover the salmon with the cilantro mixture and marinate in the refrigerator for 1 hour.

Heat up the oven to 350 °F. In an oven Pyrex, place the salmon skin side down reserving the marinade mixture. Spread the mayonnaise evenly over the fish, then add the reserved marinade on top.

Bake at 350 °F for 20 – 25 minutes.

Serve with rice or your favorite vegetables.
