- 1 Chicken breast, cut into 1-inch cubes
- 10 cipollini onion
- 10 skewers or sticks
- Ahuacatlan Avocado Oil as needed
- Salt and Pepper to taste
For Peanut Sauce
- 2 cups raw peanuts
- 3 -5 chile de árbol (Thai chili is a good substitute)
- ¼ White onion
- 1 clove of garlic
- salt and pepper to taste
- 3 Tsp Ahuacatlan Avocado Oil
In a blender, add peanuts, chile de árbol, onion and garlic and blend until smooth. Adjust salt and pepper. In a sauce pan, add Ahuacatlan Avocado Oil and heat up, once hot add the sauce and cook for a few minutes. Adjust salt and serve.
Prepare the skewers by adding the chicken and the cipollini to the sticks. Grease the skewers and add salt and pepper before placing them on the grill. Grill for a few minutes until the chicken is fully cooked. Serve with the Peanut Sauce.
